Oatmeal Raisin Cookies really are hard to beat. Their edges are crisp, their flavor is buttery sweet, and their texture is wonderfully soft and chewy. Both raisins and oatmeal are good for you, so they are easy to justify for breakfast, great as a bedtime snack..or just about any time in-between.
Azura Memory Care of Stoughton made some yummy treats. Opinions certainly varied on the use of butter vs. shortening and old-fashioned vs. quick-cooking rolled oats. Everyone agreed, though, that the name sure fit the cookie- since they vanished so quickly!
